I used to miss eating pasta, but the gluten-free alternatives are actually really great!

I don't miss anything except the ease of eating which could be a good thing. No more take out dinners without thinking ahead. No more take out burgers at all for that matter. Down 10lbs in 3 months after removing 95% of the gluten from my diet. I am sure there are times when I miss something that's where the 5% comes in!
